The deep fryer comprises: electric heater (1); collection container (7) which separates undesirable residue such as flour or batter separated from vegetables, meat and the like in frying pot (2); screw (104) which functions as a blender for mixing oil and water at a certain ratio while transferring the undesirable residue from frying pot (2) to collection container (7); thereby preventing acidification of the cooking oil and enhancing the turbidity thereof.

발열원인 전기 히터(1)와 튀김 솥(2)에 채소류나 육류등에 묻혀진 밀가루등이 육류등에서 이탈 또는 박리된 튀김 가루나 밀가루와 같은 이물질을 발열 원으로부터 분리하여 보관하는 채집통(7)과 튀김 솥(2)으로부터 이물질을 채집통(7)으로 이송하면서 일정 비율로 식용유와 물을 섞기 위해 교반기 기능을 겸한 스크류(104) 등으로 구성하여 식용유의 산패현상을 막고 탁도를 개선하는데 유용하도록 한 것이다.
